Onboard head vs porta-potty

I am in the research stage of sailing. My wife and I are trying to look into everything about owning a sailboat before we commit to it. I know nearly nothing about sailing (most of what I do know, I learned today). Anyway, I spoke to a gentleman today at a local marina. He told me that many times, with the onboard toilets and holding tanks, there will be an aroma that you have to deal with, especially on hot days. So, are porta-potties a better choice?
 
Family of 4, would like to go out for 1 or 2 nights at a time. Who knows, maybe longer if we like it.

I've always had sea toilets in the past. The only smell I used to get was when you left the boat for over a week and the anaerobic bacteria used to create the hydrogen sulphide (rotten eggs) smell. A few flushes and the smell would disappear. You can create plumbing to remove this problem, but I never bothered. Apart from that sea toilets don't smell unless the pipes need replacing.

I'm now own a bucket and chuckit which has to be the least smelly option possible.
