I'm a new sailor, so maybe I don't know what I'm talking about, but I found these REALLY useful all over my Argo dinghy.

I use them to hold coiled halyards, GNAV etc. I find them faster and more reliable then say, half hitches. In particular, my lines deploy cleaner and quicker.
The larger sizes work well keeping sails rolled or furled (when off the water).
I tie the stays to the each other and the mast for travel or storage.
How about tying the tiller extension to the tiller for travel? Oh yeah.

Never forget that reel of electrical tape!

Use it for taping shrouds and halyards to the mast for transport, cover the pins and rings (shroud plates to shrouds, jib tack & head etc), tape over wire splices to save your fingers.

Best of all, it's cheap, and I keep a small roll in my buoyancy aid (along with knife & length of line) 

Quick thought - you mention half-hitches, have you tried "slipping" hitches?

So, why do they tape up the pins/rings on stays? Is this so they don't rip the sails or so they don't work their way off?

The split rings can be snagged and straighted quite easily (jib sheets, crew etc).
If this happens, it is almost certain that the pin will drop out. If you're lucky, this will be on the leeward side.
At this point, there are few options left to you. Trying to refit a pin afloat is tricky at best, specially if it dropped overboard.
For the cost of some pennies you can avoid the heart stopping moment when you realise that the shroud has come loose .and the mast is going overboard.

Besides, the blood stains the sails ...( Mylar?)
