Have a read of the Miss Nylex thread on multihull anarchy. This months Y&Y also has some background on wingsails.

Theres a wealth of information on SA from the likes of Steve Clarke, Blunted etc if you are prepared to search for it, particularly on control systems. Adam May has also been pretty forthcoming when asked about laminate schedules etc for his wing - details can be found in one of the mosthcasts.

I can recommend some reading if you are more interested in the aerodynamics side but the general opinion from those that have done it before is to make it light, strong, and most importantly controllable before worrying too much about shape.
