Whoa there! You can build pretty much any shape using foam sandwich. Most boats (inc several in the RS range) are built using contour foam - ie foam that is scored so that it can adapt to compound curvature. These boats, when hand built, have the foam installed on a thickened epoxy foam mix over the laminate which fills the scoring in a nice light robust manner. Very similar panel weights to flat sheet.
If chosing a cheaper manufacturing method like infusion or rtm, you have to omit buttering the core as you are bagging or installing all
Laminate and core "dry", and if using contour foam, neat resin fills the kerfs, and at 1200kg/m3 that adds up.
Hence if you design like a goslow you can use flat sheet with no kerfs which if fitted well, don't have too much interstitial resin, as long as you can accept the compromises that brings.
You could also heat form flat sheets to get around some compound curvature, or strip plank it (bead and cove) particularly on male moulded boats. Both labour intensive.

Is it 1956, with people complaining about these boats with chines rather than proper round bottoms?

I don't think anyone would accuse me of being much of a phanbuoy of the Aero, certainly not the big rig I'd need to get one planing upwind- but given the choice at 12-14 years old, I would have picked the Aero over the 4.7 everyday....
