centreboard case knees

Its not very hard to plane down plywood by a few laminations, especially you have a belt sander or a decent workbench and a sharp chisel, so why not thin down a suitable size lump of your 6mm to 4mm and laminate those together, with the thinned down faces on the inside?

I dn't suppose 6mm/8mm is that critical, especially if you doubled it for about 5mm at the glue surfaces, but you have to look at it for a good few years, and don't really want to be looking at it and thinking that the one odd knee looks bad, and you wish you'd done it properly.

And don't forget the option of turning up at the nearest boatbuilder with the price of a few beers and asking if he's got any offcuts the right size.
