We go to quite a lot of trouble to record the numbers of boats that get to the starting area in Salcombe Yacht Club Regatta and Salcombe Merkin Week

But just because you tallied out it doesn't mean you sailed to the start area...

A problem with the DNC= No. entries in series + 1 approach, is that it can give the impression that it would be futiile for people to join in if they missed the first few races, as they'll already have accumulated a huge score.  This is especially true in fleets where a lot of people turn out for just one  or two races, bumping up the DNC score. The situation can appear more serious than it is, but it can be off-putting to those who don't bother with the sums.

The DNC= starters in race +2 approach avoids that problem but introduces the new one that on marginal days - light or strong - with a low turnout,  people lose very little by staying ashore, meaning those who brave the elements (and keep the racing/club-life going) get little reward for it.

An intermediate solution that I like the sound of (and yes, you can do it in Sailwave!), is to make DNC equal to the number of starters in the biggest race in the series +2.  It can cut down the massive total scores but still encourages racing on low-turnout days.

To the extent that people actually go racing for the sake of their series score... (some do!)

Does the RO count the starters in an 80 boat fleet? I suppose the only straightforward way to discern between entries and starters might be to count how many had tallied out at the time of the start.

I don't understand the reasoning either. At our club we always set up any series or regatta so that dnf scores number of starters +1 and dnc as number of entrants +1. I always felt it was harsh on those who put the effort in to go out on the water of you do it any other way. I know that you'll get some who only go as far as crossing the start line and then retire but not many do it
Everything I say is my opinion, honest

I think it varies depending on if you are scoring as a series or as a regatta.

Series scoring DNF os number of starters +1, DNC is total number of entires +1.

We did vary this at Hunts (not sure if we still do) so DNF and RAF were +1 and DNC were +2. Not that it makes a huge difference in the grand scheme of things.

Any race organisation can score a series how they like. If the conventional scoring doesn't suit your event change it!

The convention is that in a series like a champs where the vast majority of competitors turn up on the first day and leave on the last then DNC and DNF are the same. Apart from anything else it saves the scorers a lot of hassle sorting out who was which.

In something like a club series, run on multiple weekends, its conventional to have DNC and DNF with different points.
