At the Musto skiff worlds in Garda all the boats were weighed, and the ranged from an early 2000 boat to a new 2015 boats.  The weight difference was about 2kg, nothing really and some of that was how people had rigged their boat controls, water bottle cages and the like. I think that's a remarkable small range and testament to the quality and consistency of Ovington's manufacturing

that';s becasue they  were being built  and acknowledged to be  being built  by a named  boatbuilder ...  rather different  when it;s an inhouse bucket  and  roving  gun monkey  operation...

The Blaze class did the same thing a few years ago and came up with a similar result.

Some years ago Laser updated the min weight of the 2000 from 100 to 140 kg, presumably after being caught out selling wildly overweight boats ;)

I'm damn sure they bare hulls get weighed at the end of the production line (if only to make sure they aren't spending too much on resin), perhaps if that weight was recorded and included with the boats completion certificate (and given t the buyer) that would allay any fears we might have buying an expensive new boat.

However, I accept that things have probably improved significantly but that doesn't alter the fact that my Spice is far too much overweight (probably +30-40kg) to be accounted for by the lay up taking on some water over the years. The Blaze is a few kg's up too as is my Supernova (at least 5kg in both cases) when compared to the claimed weight but that could maybe, be accounted for by water uptake. In the latter two cases at least, it probably makes as near as dammit no difference but the Spice could be as much as 40% heavier. Now I did have a chat to a chap who should know and was told that the Spice claimed weight did not include the two space frames or any fittings but it was a little disingenuous of Topper to quote this way when pretty much everybody is quoting a min hull weight including everything that is bolted to the boat.

Anyway in the unlikely event I find myself in the position of buying a new boat I'll be sure I take my scales along.......

There are too many double handers and not enough people prepared to work in teams.
Go for the Albacore. We women can handle it, so you should be fine and you can set it up with more rake to de-power and also can rig the mainsheet with more purchase (more blocks), but you could also put a Firefly main on if it's windy. It's a go anywhere boat that isn't as heavy as Wayfarers and popular in the chilly waters of the Great Lakes US/Canada and the Shetland Islands.
Internationals at WPNSA start 5th August if you want to see the cream of the class in action.
