I would say a Laser 3000. Not to hard to sail, they have a
trapeze and an asymmetric (Much, much MUCH easier to teach
someone to use). Maybe an RS 500? Like a 29er, but much
more forgiving and easier to sail, plus you can get smaller
sails for it.

Depends how much your budget is what about an  iso as they seem quite cheap aswell i think a laser 4000 is also a good buy as they seem quite cheap and they do seem to get very good turnouts at open meeting also it depends on what do others sail at your club as if you can have a go as this also is a good way of trying before buying

If you are teaching someone to sail, I'd say choose a boat without a trapeeze and go for one with an Assy kite prefered. That way its easier to teach and when sailing you are able to tack without issues of them been stuck on teh wire.

Depending on your budget I'd go for an Ent, GP14, Lark or similar. None of the boats you suggested, but once you have mastered the skills and are happy sailing together , then you can commit and buy a more suitable boat.
