Ok probably a stupid question, but is the "line" coming off the bow an earthing thing or is there a purpose to the thing?

I think that's the 'wand' which automatically adjusts the front aerofoil, whilst the helm adjusts the rear one using a twist-grip control,

Not many have rear foil control I am led to believe.
Needs to sail more...

Ok, so can anyone explain how it actually works?

So does it makes the "centreboard" foil move from side to side? Do they have to connect it up when setting it up?

The wand on the bow is linked to a flap on the trailing edge of the daggerboard foil to control ride height -
When the boat is low down the wand is closer to the horizontal which angles up the flap and increases lift. As the boat gains height the wand (which trails along the surface of the water) moves more verticaly, decreasing the flap angle and decreasing lift - In an ideal world it all balances out perfectly and the boat sits at a steady height above the water.

The rudder foil is generaly adjusted by the helm with a twisty tiller extension mechanism - either altering another flap on the rudder foil, or rotating the entire foil - Though as pointed out some are fixed entirely.
 .
There are a few variations of course but thats the general principle found on most boats...

Pretty much everyone has a twisty tiller thingy - I was the last person in the UK with one that was fixed completely but that was two boats ago and wasn't very fast...
