I think we are now in the right ball park.  Hydrodynamic resistance doesn't increase linearly, i.e add twice as much sail on the same hull, doesn't mean you go twice as fast.  Moths go so much faster as the hydrodynamic resistance is minimal when on foils compared with a hull in the water for the same sail area.  So the fact that the non-foiling windsurfer has a bigger rig should make little difference unless the drag coming of the foiler is equal to or greater than a conventional board.

Because the video is only 15 seconds long ... and the crew is only in the water for 4 or 5 of those ( That we can see ) . That could also be why they stopped filming ... To go help the crew out.
