No the leaver is the distance between your center of gravity and the boats center of boyancy.

how the forces are resolved in the boat (i.e. trapize, sliding seat, racks) is irellevent to the boat being pulled down by gravity and pushed up by the water. It is important however to ballance all of those things with some wind in the sails or you get wet.
If it doesn't break it's too heavy; if it does it wasn't built right

You have 2 levers - the mast to the trapeze attachment point and your CofG and CofB. I can draw a forces diagram if you'd like!

Unless the position of your c. of g. changes and alters the horizontal distance between your c.of g. and the boat's centre of buoyancy, how can you alter the righting moment? The details you're talking about are all internal.

Amateur / non-enngineer view (feel free therefore to correct / abuse)....

Is the issue that whilst your overall leverage doesn't change, the lower down the mast you attach the wire, the more you will have to push off with your feet to counteract the inward pull of the wire. So if your body was a solid rod this wouldn't be a problem, but for joe average this position would be impossible to hold.

Therefore the higher up the mast you go, the more comfortable the position is since the force applied is more vertical, so the compromise is between going as high / comfortable as poss, vs losing the flexibilty from the tip by attaching too high?

MM - is that what you mean by 'the forces are internal'?
