Which dinghy's fall into the skiff category? I've heard so many different definitions I'm unsure now.

You will wish you hadn't asked that as give this thread about ten minutes and you will get all sorts of answers.
It has been asked here before (probably more than once!), so try a search of the forum and you will see what I mean.

If you can call a class of boat a skiff loudly in the bar at the Sydney Flying Squadron when its packed after an an 18 footer racing day and walk out without bruises then it probably is one...

Apparent wind sailing on all courses in all wind strengths. Is how I would define it. What this effectively means is only boats that have multiple rigs. Or what Jim said.

Something that is frighteningly fast, can pretty much annihilate if you step in the wrong place at a certain time and is sailed by complete and utter lunatics?

If you'd asked me, before i came here and learned all there is to know about everything sailing, (thereby becoming totally confused) I would have defined a skiff as a boat with flat bottom as against a rockered hull, used to row or sail on flat water where waves are not a major issue.

The Term Skiff, is something that is over used nowadays and a particular pet hate of mine.
But i would agree with Jack Sparrow, but add mono-hulled.
