I can do bespoke designs for boat names and sail graphics. If you saw the 3.5m graphic of a pole dancer on the sail of the international 14 at the show then you've seen a sample of my work!

For mail order stick on dacron by the metre see the Point North/Profabrics website
and search for  Boat Stuff - Sailcloth. They have black, red, green, blue and white at 157cm wide at £12.09 plus vat per metre. That's a lot of sail numbers and compared with the usual £1 per number that's a big saving.

These guys can do just about anything seemingly. I got my employers logo printed out 3 feet across to go on my mainsail for a regatta once and they have done boat names and grpahics too.
 
If you can get the files in vector form as other people have mentioned you should be OK.

If you have the ability to do a good vector graphic and produce it in the right format some companies will do a custom vinyl sticker for you. In the past I've taken a standard font, turned it into a vector graphic and then edited it to produce the result I want. Stick to monochrome though!

If you want to really push the boat out you can get some Car paintshops to do custom Graphics and names on boats, for example Master Of Puppets the N12, is amazing!
