 I have been trying for the last month to find day sailing trips leaving from cornwall area. Back home we sailed hard in all types of wind (5-65kts) Are there charter boats that do the same sort of thing or is it all private yachts.

I've sailed with Trinity Sailing down the Devon / Cornwall coast, across
the channel and to Alderney and Guernsey. They also compete in the King
George V Cup. Very good experience. And you keep these loverly old
boats alive. There is also a beautiful Working boat that is for charter /
booking that sails out of Falmouth. Her name is 'EVE' I will have a look for
a website and post if I find it.

Eve is much bigger than a Falmouth Working boat but is also built to a classic design. We often see Eve sailing around the Carrick roads when we are out racing. They go out in most winds as they just reef everything down.
