So what's the advantage of a Cutter Rig?

The cutter is one of several  http://en.wikipedia.org/wiki/Sail-plan#Types_of_ships" rel="nofollow - types of sailboats . Traditionally the sloop rig was a rig with a single mast located forward of 70% of the length of the sailplan. Simple, easy to get rid of a whole headsail, rather than reefing one into some awful bag of a sail. Also sheet loads are much lower so for family sailing they are great, especially on bigger boats. On smaller boats it can allow you to get away with small winches or in some cases no winches at all. On dinghies the latter part of this does not really apply, which is why I guess we never see them.

Jib on a bowsprit gets some CoE forward, reducing weather helm
 
Divides sail area into smaller, easier to manage areas. Important in an era pre winches.
 
In the era of cotton sails, smaller non-overlapping sails didn't stretch so much.
