Can anybody recommend a good single handed trailable sailing boat to river sail and lake sail with inboard / outboard that's easy for one person to lower and raise the mast when under power and a good safe sail.

Although not designed as a single hander many cruising sailors do use it as one (so you'll have room for the occasional passenger). According to the link it will take an outboard as well. You might have very limited options fitting a decent outboard to a true single hander. There are lightweight electric outboards around but they're probably not a cruising option.
